Happy Friday, friends!
Hope everyone had an enjoyable Memorial Day weekend. It’s definitely been hot and humid here in Nashville so cooking in the kitchen seems a little less appealing these days. Time to break out the blender!
I don’t know why, but I really only enjoy smoothies in warmer weather. I guess there’s just something about it’s cool, refreshing effect that I only appreciate when I’m practically melting haha.
In honor of my favorite beet-infused smoothie from my friends at Juice Bar, I decided to try to make my own beet-y concoction. (It should also be noted that this is the only way I eats beets. Even Dietitians have #foodprobs!) Check out my super simple 4 ingredient Peachy Beet Smoothie…
Ingredients
- 1 cup Peach Truck peaches
- 1/3 cup Bountiful Blessings Farm yellow beets
- 1/2 cup Nature's Cornerstone coconut kefir
- 3/4 cup unsweetened plain soymilk (or milk of choice)
Instructions
- Place all the ingredients into a blender.
- Puree until smooth.
- Enjoy!

To freeze your peaches, simply slice them and place on a silpat to freeze until hard. (This is also a great way to save really ripe produce for smoothies or baked goods later!)
