Peanut Butter Chocolate Oat Bites (No Bake)

Equipment

  • 1 mini cupcake pan
  • 12 mini cupcake liners

Ingredients
  

  • 4 tbsp Peanut Butter
  • 1 tbsp Confectioners Erythritol Sugar no added sugar (I used Swerve)
  • 1/4 cup old fashioned oats
  • 1/2 cup no added sugar chocolate chips I used LIly's milk chocolate chips

Instructions
 

  • In a small mixing bowl, add peanut butter. Heat peanut butter in the microwave for 15 seconds if it is too stiff to mix.
  • Add confectioners sugar to the peanut butter and mix together.
  • Next, add oats to the bowl and and combine.
  • Into a muffin pan with liners (or a silicone muffin pan), add a spoon of the mixture and smash down.
  • Melt chocolate chips in a microwave safe dish. You may need to add a drop of vegetable oil. Microwave for 15-20 seconds, mix, and repeat once more if not melted.
  • Top each bite with a small spoon of melted chocolate (approx 1 teaspoon).
  • Place the pan of prepared bites in the refrigerator for 30 minutes. After refrigerated, you can remove from the pan and place into a sealed container. Store in the refrigerator. Enjoy!
